1 pan meal : Brussel Sprouts with Bacon, Cauliflower & Lamb – gluten free

I am all for an easy and nutritious meal that can be made in 1 pan. This is one of my favourites :  Brussel Sprouts with Bacon, Cauliflower and Lamb cutlets. Yep I said brussel sprouts and… YES my kids loved it, I am sure this recipe will change your perception of this little under-rated vegetable too  ! This recipe is also gluten free and grain free.

Recipe for a 1 pan delicious healthy dinner – gluten free

Brussel Sprouts with Bacon, Cauliflower and Lamb cutlets

Ingredients :

  • 3 cups of brussel sprouts
  • 2-3 tablespoons of coconut oil, avocado oil, macadamia nut oil, or olive oil.
  • 4 slices of bacon, diced
  • 2 slices of pancetta diced (optional but it makes lovely crispy bits !)
  • 1/2 red onion diced
  • 2 cups of cauliflower – cut into bite size pieces
  • salt and pepper
  • aged balsamic vinegar
  • chopped parsley and mint.
  • french lamb cutlets x 6 (or however many you want per person)

Instructions :

Trim the ends and any old outer leaves from the Brussels sprouts. (Don’t throw away the leaves — toss them in a container and keep them in the fridge so later you can make some delicious  Brussels Sprouts Chips by Nom Nom Paleo)

Cut the sprouts in half and toss them with melted oil of choice and add salt, and pepper.

Add in the cauliflower, red onion and pancetta and bacon. Toss well add more oil if needed.

The sprouts take about 30-35 minutes to roast, so set your timer for 10 minute intervals x3 to regularly rotate and toss the dish.

While this is cooking grill or bbq your lamb cutlets until they are pink in the middle.

Once the brussel sprout dish is cooked, add salt and pepper to taste and drizzle some of your favorite balsamic vinegar on the cooked dish.

Finish the dish with lamb cutlets on top then sprinkle with chopped parsley and mint to finish.

Different, simple and delicious !!

TIP :  Easy to reheat and have the next day for lunch or while you are prepping dinner make up another pan of roast veggies, these are fantastic to have on hand in the fridge to snack on (especially if breastfeeding) or add to salads !
