Easy Custard Tart – grain free, refined sugar free.

bfabpaleotartMy hubby’s favourite dessert is custard tart. So I have been playing about with a more nutritious recipe. This one is awesome – as you don’t need to be a pastry whizz. There is no need for rolling out pastry, so put that rolling pin away.

This grain free custard tart is quick, easy and very delicious ! I hope it becomes a family favourite like it is in our house.

EASY CUSTARD TART 

Refined sugar, dairy free, grain free and gluten free.

Makes 6 portion(s)

Pastry

  • 120 g blanched almond meal
  • 60 g coconut flour
  • 60 g coconut oil
  • 2 tbsp chia flour, (not required, added for nutrition – just use ground chia seeds)
  • 1 large egg
  • 50 g Raw Honey/ Maple Syrup or sweetener of choice.
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • pinch salt
  • pinch nutmeg

Custard

  • 400 ml coconut milk, 1 tin (Ayam brand is best – no preservatives)
  • 5 large fresh free range eggs
  • 2 tbsp Raw Honey/ Maple Syrup or sweetner of choice.
  • 1 tsp vanilla extract
  • pinch salt
  • pinch nutmeg for garnish

Preheat oven to 180 degrees.

Add the dry ingredients for the pastry into food processor. Combine on medium speed for 10 secs.

Add the rest of the ingredients for the pastry to food processor Mix on medium speed for 15 -30 seconds until dough comes together.

Press dough in to your pie tins (or 1 large tin) and brush the top edges of the pie with water. (**nb you are not able to roll this dough out**)

Cover dough with baking paper and pie weights/beans or rice and blind bake in the oven 180 degrees for 7 minutes.

While the pastry is baking in the oven prepare the custard.

Clean food processor bowl.

Add all custard ingredients to clean food processor bowl. Blend on speed medium speed for 20- 30 seconds.

Once the pastry is done blind baking, remove from oven and carefully fill the pastry with custard mixture. Sprinkle with nutmeg.

Bake in oven for 25-30 minutes or until there is a slight wobble to the mixture in the centre.

Allow to cool completely before refrigerating.

Serve cold topped with your favourite berries. We hand picked these strawberries from a local strawberry farm – super delicious.
