Avocado Chocolate Mousse – vegan, gluten free.

Now…. don’t freak out, yes this chocolate mousse has avocado in it ! Trust me if I didn’t tell you, you wouldn’t even notice. Even better give it to the kids and they will think it is the best treat ever.  It is so simple and delicious plus is a fantastic alternative if you are craving something sweet – especially if pregnant or postpartum.

AVOCADO CHOCOLATE MOUSSE

A gluten free, grain free, dairy free, vegan recipe.

Ingredients/Directions:

  • Grind up in a high speed blender 100g ice and 150g of raw cashews.
  • Add 4 – 6 medjool dates (to taste) – grind again.
  • Add 1 x whole Avocado process until fluffy.
  • Add 2-3 tablepoons of SWITCH NUTRITION PROTEIN SWITCH (use code BFAB for 10% OFF)
  • Add 1tsp natural vanilla essenceAdd 1tsp of olive oil or coconut oil (this gives the mousse a lovely texture and gloss)
  • Pour into glasses – leave in fridge until cold / set then serve.
  • Can be frozen – just thaw slightly prior to serving. My kids love it as ice-cream!

So delicious you can’t believe its good for you!

Avocados for Cancer Prevention
Avocados are high in oleic acid have been shown to inhibit the growth cancer, particularly oral cancer, prostate cancer and breast cancer.

They also make an essential nutrient for pregnancy and postpartum. Plus are a wonderful first baby food !

Avocados for Eye Health
Avocados have more of the carotenoid lutein than any other commonly consumed fruit. Lutein protects against macular degeneration and cataracts, two disabling age-related eye diseases.

Avocados Lower Cholesterol
Avocados are high in beta-sitosterol, a compound that has been shown to lower cholesterol levels. In one study, 45 volunteers experienced an average drop in cholesterol of 17% after eating avocados for only one week.

Avocados for Heart & Baby Health
One cup of avocado has 23% of the recommended daily value of folate, this mineral is essential for growing babies during pregnancy and after. Studies show that people who eat diets rich in folate also have a much lower incidence of heart disease than those who don’t. The vitamin E, monounsaturated fats, and glutathione in avocado are also great for your heart.

Avocados for Stroke Prevention
The high levels of folate in avocado are also protective against strokes. People who eat diets rich in folate have a much lower risk of stroke than those who don’t.

Better Nutrient Absorption with Avocados
Research has found that certain nutrients are absorbed better when eaten with avocado. In one study, when participants ate a salad containing avocados, they absorbed five times the amount of carotenoids (a group of nutrients that includes lycopene and beta carotene) than those who didn’t include avocados.
